Join us on Zoom for a very special edition of Bubbie's Kitchen, as we learn how to cook with apples and discuss the Jewish holiday of Sukkot.

Ingredients and Instructions

APFELKUCHEN  
1/2 cup butter, margarine, vegan butter at room temp
1/2 cup sugar
2 eggs
1/2 tsp almond extract, almond liqueur or vanilla extract
1 cup flour
1 TB baking powder
1/2 tsp salt
APPLE TOPPING:
2-3 small apples
1/3 cup sugar
1 tsp cinnamon

Directions:
Preheat oven to 375 degrees. Prepare a 9 inch tart pam with cooking spray or oil.
Mix together the butter and sugar with a hand mixer or spatula. Add the eggs and extract/liqueur and mix well.
In a separate bowl combine the flour, baking powder and salt. Slowly add the flour mixture to the batter and mix well until combined.
Pour batter into the prepared tart pan and spread out with a spatula until the top is even. (you can spray the spatula with spray oil to make it easier to work with).
Slice the apples into thin slices and layer them on top of the batter.
Stir together the cinnamon and sugar topping and pour over the apples.
Place the tart pan on a baking sheet (in case batter spills over while baking) and bake for 35-40 mins until top is golden and cake tester comes out clean. If cake isn't done sufficiently, please bake for 5 more minutes.

CINNAMON APPLE BEER BREAD
3 cups flour
1/4 cup brown sugar
1 TABLESPOON baking powder
1 teaspoon cinnamon
1 teaspoon salt
1  12 ounce bottle of apple ale, hard cider or a combination of 6 ounces beer mixed with 6  ounces of apple juice
Directions: Preheat oven to 350 degrees. Grease a standard 9 inch loaf pan and set aside.
In large bowl combine flour, brown sugar, baking powder, cinnamon and salt. Whisk to combine.
Apple whichever apple liquid and mix just until smooth dough forms. Be careful not to over mix the dough which may cause to become too dense.
Transfer dough to prepared loaf pan. Bake until top feels firm, approximately 50 minutes.
Delicious spread with apple butter!

APPLE PIE BREAKFAST COOKIES www.happykidskitchen.com
2 large eggs
1/2 cup unsweetened applesauce
1/4 cup veg oil
2 teaspoons  vanilla extract
1 teaspoon cinnamon
1 1/2 tsp baking powder
1/4 teaspoon salt
1 cup rolled oats
3/4 cup whole wheat flour (can substitute reg flour)
2 Tablespoons hemp, chia seeds
1 cup finely chopped apple
1 apple, thinly sliced, (squeeze a drop of lemon on top of slices to prevent browning), to place on top
optional add ins: 1/4 cup finely chopped pumpkin seeds, walnuts, 1/2 cup finely grated carrots, 1/4 cup raisins or Craisins

Directions: Preheat oven to 350 degrees. Place parchment paper on a baking sheet. Whisk eggs, applesauce, oil, maple syrup and vanilla in a large bowl, just until blended. Mix in cinnamon, baking powder, and salt. Mix in oats, flour, seeds and 1 cup finely chopped apple. Stir in any additional add ins you'd like.
In a small bowl mix together 1 TB sugar and sprinkle of cinnamon.
Using a 1/4 cup measuring cup, scoop batter onto baking sheet (approximately 10 cookies). Sprinkle the sugar-cinnamon mixture over each cookie and top with thinly sliced apple.
Bake until lightly browned and cooked through, approximaately 10-12 minutes. Cool before eating.

variety of apples, sliced
2 TBS honey
1 cup of water
flavor combos:
S’mores: 1/3 cup melted chocolate chips, mini marshmallows, crushed graham crackers
Sunflower chews: sunflower nut butter, Rice Krispies
Apple pie: caramel sauce, crushed graham crackers
Choconut: chocolate syrup and coconut
(What flavor combos would you like to share?)
Sticks to place your apple slices on (optional)

Directions: Please stir two tablespoons of honey into your cup of water. Soak your variety of apple slices in the mixture as this prevents browning.
Prepare your flavor combos and begin to dip your soaked apple slices in your flavor combos. Place on board and serve to your family!
